Week’s End Spicy Stir Fry

I had a look in my fridge this evening and took out what needed to be used. This included a half of a red pepper that was going a bit soft, 2 cups of cooked rice and some veggie dogs that really needed to be eaten. I made a quick stir fry which took me less than 10 minutes to make and it serves 2 people but really big portions. You could serve 4 people and have a side salad with it.

It’s amazing how much food waste there is in the world, so consider cleaning out your fridge on a weekly basis and make stir frys or casseroles with the contents. Be creative!! My partner is usually scared of my weird concoctions but he actually enjoyed this one!

Week’s End Spicy Stir Fry

1 medium onion (diced)

1 garlic clove (minced)

2 tsps of grated ginger (fresh)

1/2 red pepper (diced)

1 1/2 jumbo veggie dogs (sliced thin, about 1/2 cup or so)

1/2 cup frozen corn

2 cups cooked and cooled rice

2 tbsp light soy sauce

1-2 tsp sambal oelek or hot sauce

Fry the onion, ginger, garlic and pepper and veggie dogs in a little oil for about 2 minutes on medium heat. Then add corn and hot sauce and heat for another 2 minutes or so.  Ad the cooled rice & soy sauce and stir until everything is well blended. Lower the heat and cook for a few minutes until the rice has warmed up.

I find the spicy addition really makes this stir fry great. If you don’t have hot sauce consider adding some hot chili sauce or a Habanero or jalapeno pepper if you have it on hand.
