Recipe: Easy Spelt Crepes

The nice thing about not working right now is that I get to make a good breakfast in the morning, one that requires a bit more effort and time. I had a craving for crepes but didn’t want to use wheat flour so I took out some light spelt and made these. You can also use regular flour or your flour of choice. Easy!

Easy Spelt Crepes

1 cup light spelt flour

1 cup non dairy milk or water (or a combination)

1/2 tsp vanilla extract

Blend all ingredients in a bowl. The mixture should be fairly runny. I ended up adding a tbsp or so more of milk. Then heat a non-stick frying pan till it’s really hot, on medium heat.

Take a large soup laddle and pour some of the batter in the hot pan and swirl it around so it coats the bottom and the crepe is really thin. You should be able to see the sides

lift off the pan and when the middle is cooked, flip it around for 20 seconds or so. Do this until all batter is gone. You’ll get about 4 crepes which is a good amount for 2 people.

I stuffed mine with fresh strawberries and maple syrup but you can use any topping you want, such as vegan cheese, jam, bananas & chocolate chips…the choices are endless!

This is also a cheap dinner for under $2 for a family of 4 if you double the recipe. Who said crepes can’t be eaten for dinner right? :D
