Toasted Open Faced Avocado Sandwich

I had this the other night for dinner. I only used one slice of bread as I try not too eat too much bread, but in the recipe I am suggesting to use two slices. This is a quick cheap meal! Cost me about $1.25. It took me less than 10 minutes to make. I only used half the cheese and salsa for my one slice sandwich but did use the entire avocado.

Toasted Open Faced Avocado Sandwich

2 slices of bread

1 medium or large avocado (sliced)

1/4 cup salsa

1/4 cup grated vegan rice cheese (2 Tbsp is also sufficient)

Ground Pepper

Place half the avocado pieces on one slice of bread and the other half on the second one. Spread two tablespoons of salsa on each, then top with two Tbsp of the grated cheese then grind some pepper on top. Place in toaster oven until cheese is melted. I served this with a side of  steamed broccoli and yellow beans. YUM!
