No Brainer 5 minute Pancakes

Every Year we are very bored on Christmas day. Nothing is open, not even a restaurant! As I had no desire to cook for dinner, i decided to make a batch of my pancakes. They are so easy and filling.
No Brainer pancakes
1/2 cup flour
1/2 cup quick oatmeal
1 tsp baking soda
Pinch of salt
1 cup of non dairy milk
Mix dry ingredients, then mix in milk. Let batter sit for 5 minutes. Heat pan on medium and laddle mixture into the pan. I make 3 small pancakes at a time. When top starts to bubble, flip over and cook for another minute. Makes 6 small pancakes. I find two fills me up! Serve with fruit and/or syrup.

This may be a dumb question, but I’m really clueless when it comes to baking. I like to only use whole grains, so would it be possible to make these using whole wheat flour and regular oats, not the quick oats? Or are the quick oats required for it to work? Thanks!
Hey Molly, I am pretty sure you can use wole grains. You might have to let the batter sit for 10 minutes instead of 5 though. Good luck!
I might try adding blueberries to this batter make it more nutritious.
