Meals under $3: Rice & Almond Burgers

I’ve been doing very little grocery shopping and am trying to use up what is in my pantry and especially my fridge! I spend about $150 a month on food for 2 which includes at least $60 in fresh produce which I purchase at a fruit and veggie store for dirt cheap.
I made these last night with what I had on hand and was pleased with the results!
RICE AND ALMOND BURGERS
1 cup rice – cooked (this gave me almost 3 cups of cooked)
1/2 cup almond meal (you can experiment with sunflower seed meal too!)
1 cup vegetables ( I blended/chopped one carrot and some broccoli)
2 Tbsp Braggs
2 Tbsp Flax Seed Meal
1/4 cup oats (I used quick)
1/2 cup warm water
Blend everything in a bowl. Refrigerate for a bit especially if you have warm rice. Form 6 patties with the mixture. Then place patties in the freezer for 30mins. This just helps to keep their form for frying. Fry on medium heat in a greased pan until browned on each side. Serve alone or open-faced on half of a bun or a piece of bread.

Protein: 4.5gr
Carbohydrates: 14.8gr
There are also a lot of vitamins in this, mainly A and Manganese. If you are concerned about Sodium, you may use herbs and spices instead of Braggs. Braggs has natural sodium and is ok for people on low sodium diets to consume in small amounts. You can also reduce the total amount to 1 Tbsp. You will also get more nutrition if using brown rice.
This would be nice with a side salad and/or some roasted potatoes. I served this with oven baked sweet potatoes.
