Quinoa Salad

I love quinoa. I found some on sale somewhere and have been waiting to use it. So I decided to make some quinoa salad to serve with a tofu quiche I had made.
Quinoa Salad
1 cup quinoa
2 cups veggie broth or water
1 english cucumber (peeled, seeded & diced)
1 small red pepper
2 green onions (chopped)
Dressing:
1/4 cup olive oil
1/4 cupĀ lime juice
2 tbsp sesame seed oil
1 tsp nutritional yeast
1 pinch of dried mint
Salt to taste
(Shake dressing ingredients in a jar)
Add veggie broth and quinoa into a saucepan, bring to boil on high then set to low with cover on and let cook until all liquid is absorbed. Once cooked, fluff with a fork and add to a large bowl. Let cool. Add veggies and dressing and mix well.
Note: I like using corn in this salad but I didn’t have any on hand. If you do, 1/2 cup of it really makes it look and taste amazing!

I like what I see here, may just add a little bit of the fresh chives that are coming up in the yard. Quinoa rocks!
David, good idea about the chives! I should go check if mine are up too.
This looks great. I have to admit that quinoa scares me a bit. Oh, I use the flour and I use the flakes, but the one time I tried to cook the grain I did it badly. I need to just bite the bullet and do it again. And I would be adding chives from my little herb pot!
