Tofu Scramble Recipe

This is going to be my dinner tonight with roasted potatoes. YUM! Who says that a scramble is just for breakfast!?

 

TOFU SCRAMBLE

1 1lb firm tofu (crumbled)

2 green onions (sliced very thin)

1 green pepper (diced)

2 tomatoes (chopped)

2 Tbsp nutritional yeast

1/8 tsp turmeric

Salt & Pepper to taste (or Braggs)

 

Fry up green pepper in a little oil then add all other ingredients and stir properly. Heat until warm and serve. So easy, so good! Feel free to add more veggies too! I bet some baby spinach would be tasty in this.
