Vegan Corn Chowder

This is my friend’s recipe. It is ridiculously easy to make and really tasty!
VEGAN CORN CHOWDER
1 onion (diced)
2 Tbsp margarine (I used Earth Balance)
2-3 large cubed potatoes (precook until semi soft)
1 19oz can of cream corn (I only had a 15oz one and it worked great)
1 19 oz can of corn niblets (I only had a 15oz and it was fine!)
1 liter soy milk or 2 containers of silk coffee creamer (I used 1 liter soymilk plus 1/2 cup creamer)
3 tsp liquid smoke (I didn’t use this)
Salt & Pepper to taste
Melt margarine and then fry up onion for a few minutes until tender. Add all other ingredients and cook on medium-low heat for about half an hour. Blend with a hand blender (I left a few pieces of potato whole). Season with salt & pepper.
PS?: Using fresh corn on the cob would be SO good for this. You could also add a few veggie dogs instead of the liquid smoke. ENJOY!
