Thanksgiving weekend & Cheezy Kale Chips

For those of you who are Canadian, you know that this weekend is Thanksgiving! I don’t do a thanksgiving meal or partake in any festivities but I do enjoy the extra day off. As you know my week has been rather brutal, so much so that writing wasn’t even possible. Even though I had the day off yesterday, I didn’t have time since I was getting caught up with chores and running errands.
We found out that we are moving to NYC and if all goes as planned it will be within the year. Hopefully sooner. We have found out that we will be here for the holidays, so I have started to make some gifts such as apple jelly and will be making some handmade soap as well. Normally I have already started making gifts but since we didnot know if we’d be living here or not for the holidays, I waited.

I wanted to make this one since there is added protein, which makes for a perfect vegan snack. I bought some local kale for $2 and will be taking snack bags of this at work for my lunches.
It is quite warm here for a mid October day therefore I am not craving heavy foods at all! I feel bad for anyone who will have to endure a big heavy thanksgiving dinner in this weather! It’s more like an iced-tea & cold sandwiches weather, not a tofurky & mashed potato one. Yikes.
I will be completing my jelly this weekend and sharing some photos with you!
