Family Meals Under $3: Artichoke Broccoli Quinoa

I made this last night and it was meant to be served a side dish but we ended up eating it as a main dish! Some fried diced tofu, roasted cashews or sunflowers would be great in this if you wanted it as a main. This is my own recipe. I wanted something quick & healthy to make. This took me roughly 20mins from start to finish.

ARTICHOKE BROCCOLI QUINOA

Cook 1 cup of Quinoa according to directions (I use homemade veggie broth instead of water).

Chop one medium onion and fry in a pan with some coconut or olive oil, then add a little water and add 1 1/2 cups chopped broccoli and 1 15oz can of drained artichokes (finely chopped). Steam until broccoli is tender. Add cooked quinoa, 2 tbsps of nutritional yeast and stir. Add salt & pepper to taste.

Serving this with hot sauce or sambal oelek would be good too.
