Red Quinoa Burgers with Salsa, Cilantro & Avocado

My dinner last night was incredibly satisfying and I wanted to share. I made this Quinoa Burger but use red quinoa and different toppings.
What a difference!
The red quinoa seems a little milder and less nutty tasting than its yellow counterpart. My partner even said that he loved the taste of the red quinoa. I made 3 large burgers with this recipe, then topped mine with 2 Tbsp of chopped local organic cilantro, 2Tbsp of local salsa (from a local company called Naked Pickle @ the farmer’s market) & some organic avocado slices (1/2 medium avocado). Place these toppings on your burger in that order. I don’t use a bun but you could use half a bun and place the burger on top, then the toppings.
I wish I had taken a photo of it, it was amazing. The salsa that I use is rather spicy with a cinnamon taste to it, so I suggest using homemade salsa with lots of different spices in it, not the generic store bought one.
On the side, I served the burger with a mixture of local potatoes, onions and carrots which were pre-cooked and fried in a little virgin coconut oil, then fleur de sel sprinkled on top. Perfect dinner for a chilly evening!
