Easy Vegan Artichoke Dip

This is something I haven’t made in awhile because it makes a lot and since there are only two of us around, it’s tough eating it all! I decided to bite the bullet and make it anyway. Hopefully someone will be interested in taking the leftovers off my hands. It’s so good, serve hot!

EASY VEGAN ARTICHOKE DIP

1 can artichoke hearts (14oz), drained and rinsed
1-2 cloves garlic, peeled and crushed
1 tablespoon lemon juice
1/4 cup Vegan Mayonaise (I use Vegenaise)
1/4 cup Tofutti non-cream cheese
2 tablespoons bread crumbs

Combine garlic, lemon juice, vegan mayo, non-cream cheese and pinch of salt in food processor and process until smooth. Add artichoke hearts and pulse a few more times. Pour mixture into a small casserole dish. Sprinkle bread crumbs on top. Bake at 375 for 20 to 25 minutes until bubbly.

I serve this with anything from any kind of bread to tortilla chips. YUMMY!

  1. Do you have any advice for making this with a raw artichoke? I bought one because they were cheap and I’m not too sure what to do with it!

  2. Sorry Linda, I have no idea how to make this using fresh artichokes. :( I’ve only used the canned ones. Wonder if you can cut them up and marinate them first, then use them..that could probably work. Good luck and sorry I can’t help!

  3. That’s ok! I ended up giving the artichoke to my neighbour as part of a bouquet haha. I love artichoke dip, I will try this one out with the ones in the jar.
