Strawberry Jam Recipe – No Refined Sugar!

The past few years, I’ve been experimenting with making jams with a lower sugar content. I still felt as if the low sugar jam recipes had too much sugar in it and were too sweet for me. This year, I did things differently and I am very happy about the results. Here is what I did!
NO REFINED SUGAR STRAWBERRY JAM
4 cups crushed very ripe strawberries (crush one layer at a time with a potato masher, do not blend!)
1 cup water or unsweetened fruit juice (I used filtered water)
1 tsp lemon juice
1 package of Bernadin No Sugar Pectin
1/2 cup sweetener (I made one batch with honey and one with organic cane sugar) – You may try maple syrup or agave as well!!
In a large saucepan, add strawberries, water & lemon juice & stir until dissolved. Add sweetener and stir, Bring to boil and boil hard for 3 minutes. Stir and remove any foam. Ladle in canning jars and process in a hot water bath for 5 minutes. Let jars sit 24hrs, then store in a cool, dry place.
This recipe made 5X 250ml jars.
