Family Meals under $3: Spicy Red Lentil & Carrot Soup

Another soup recipe made with ingredients I had on hand. So easy!

SPICY RED LENTIL & CARROT SOUP

2 Tbsp Olive Oil
2 tsp cumin seeds (do NOT use the powder, you have to use the seeds for this.)

1/2 tsp red chili flakes (use just a pinch if you don’t want it spicy)

3/4 cup red lentils

8 medium carrots (sliced in disks)

4 cups homemade vegetable broth

1/2 cup non-dairy yogurt or milk (*I used plain coconut yogurt)

Heat oil, then add cumin seeds and chili flakes and heat until they start getting fragrant and pop (about a minute or two). Add all other ingredients aside from yogurt. Cook on medium heat for about 20mins or until lentils and carrots are cooked. Blend with an immersion blender. Add salt to taste. Add yogurt and stir.

*I will definitely be using this coconut yogurt in soups as I find it makes it nice and creamy! I didn’t have any soy milk so I used this and was very happy with the results. Let me know if you use another type of yogurt.

 Soup is a wonderful frugal meal. Broth, local veggies and some spices is all you need!

  1. Looks good — maybe I’ll try with store-bought broth since I’m short on time. Lentil dishes are always a winner for me.

  3. I love lentils and would like to try this. For some reason, I can never get the lentils soft no matter how long I soak them ahead of time. Do you have any tips?

  4. You have to use red lentils for this recipe, they cook fast. YLentils never need to be soaked, that’s why they are so wonderful to use, no soaking,just cooking. Use as-is! Make sure you cover them with enough water in order for them to cook, they generally only take 20 minutes if you cook them on their own. Good luck Tracy! :)
