Avocado Coleslaw Recipe

Frugal Avocado Cabbage Dinner (Avocado Coleslaw)

Alright, so I wasn’t that hungry at dinnertime the other night but I really needed to eat and also be able to use up some produce that I had on hand. I found a recipe online for an Avocado Coleslaw which is right up my alley. I modified the original recipe.

Avocado Coleslaw

3 cups shredded green cabbage

1/2 red pepper (diced)

1 green onion (chopped)

1 very ripe avocado

2 tsps lime juice

1 small garlic clove (minced)

1/4 cup vegan sour cream

Salt & Pepper to taste

Mix the veggies together in a large bowl. In a small food processor, blend avocado, sour cream, garlic, lime juice & salt & pepper (feel free to sprikle a little cumin in there too!). The mixture should be thick and really creamy. Add the sauce to the cabbage mixture and mix until well blended. Serve right away or store in fridge. This serves two people. I had half for dinner and the other half for lunch the next day!
